Vegetarian Frittata & Lemon Chicken Fajita
This week keith cooked up a vegetarian frittata and a lemon chicken fajita. This is a really good no mess, good eatin' meal that hit every spot in the room [that being stomachs].
Vegetarian Frittata
Ingredients:
6 beaten eggs
Milk
Sautéd onions
Assorted vegetables [peppers & courgettes]
Salt/Pepper
Cheese [200g]
Method:
Sauté all the vegetables and onions and place in an flat casserole dish. In a bowl, beat 6 eggs with 1/2 cup of flour. Mix egg and flour mix with vegetables. Cover in cheese and cook
until the eggs have set.
Lemon Chicken Fajita [for Vegetarians]
Ingredients:
Oven-roast vegetables [parsnip in this case]
Quorn chicken pieces (2 bags)
Soft cheese [100g]
Sautéd onions (finely chopped)
Milk
Cheese
Tortilla's
Method:
Oven-roast the vegetables, sauté the onions and warm through the Quorn chicken.
Add milk, oven vegetables and soft cheese. Mix and heat until cooked through.
Wrap in tortilla's and serve.

Cheers for the cool write-up. Just finished round two with the meal and am happy to report that the frittata is history and the fajita's will be banished to cullinary history for dinner tonight.
Seemed a bit empty without Don there for some strange reason, like there were too few of us or something like that. It's very obvious when you drop from 5 people down to 4. I think it was because Don, Adam and Cheryl were all at the last one, when we only had H as an extra last night. Remember fighting for space at Don's table? We had positively loads of space yesterday!
Good effort on Heather too - she made a well nice dessert that deserves a mention (send Phil the recipe H, so he can put it up as well).
That meal sounds awesome, I'm hungrily rueing not being there!!
I'm only now getting used to having dinner when my body expects breakfast and vice versa.
